This idea comes from a good friend of ours. It is such a simply genius idea and it makes for a filling, carb-rich meal.

Serves – 4
Potatoes – 4
Textured Vegetable Protein (TVP) – 4 cups dry
Barbecue Sauce – 1/2 cup
Can of tomato paste – 6oz
Water – 6 oz
Onion powder – 3 tsp
Fresh Garlic – 3-4 chopped cloves
Salt – 2 tsp
Pepper – 1 tsp
Paprika – 2 tsp
Coconut Aminos – 4 tbsp
- Start the baked potatoes, as those take the longest. We use our air fryer, but obviously a conventional oven works just fine.
- Bring a pot of water to a boil. In another pot, add your TVP with a small amount of oil.
- Once the water comes to a boil, add it to the TVP. It will absorb the water and create a texture that is very close to ground hamburger. Then add the spices, barbeque sauce, garlic, and any other peppers you would like.
- When the potatoes are done baking, slap as much of the TVP as you can fit in it. Top it off with some sour cream, some chives, vegan bacon bits, whatever your inner-fat-kid’s heart desires!
